RECIPE: 10 Minute Dinner - Halloumi and Puy Lentil Salad






What did the cheese say when it looked in the mirror? Halloumi! Sorry for the cheesy joke!

Don't be fooled by my recent baking posts- when it comes to cooking dinner for myself, I can be incredibly lazy in the kitchen. When I'm cooking for one, it can be hard to motivate myself to stretch beyond heating up a carton soup, or beans on toast. I lived in this flat for three weeks at the end of last year, and didn't use the oven once as far as I can remember.

This year though, I'm determined to put an end to this laziness and rekindle the love of cooking and experimenting with new food that I had when I moved into my first student house two years ago. Starting with this- pan fried halloumi and puy lentils salad. In barely much more time than it takes to make beans on toast, I made something more interesting, more filling and more colourful- and colour is the most important thing as far as I'm concerned!

To serve one:
1/4 medium cucumber
1 medium sweet pepper
6 cherry tomatoes
1/2 pack ready-prepared microwave puy lentils
4 thin slices halloumi
1tbsp olive oil
2tsp herbes de provence

Chop the cucumber, pepper and tomatoes into small pieces. Slice the halloumi into thin strips- about 1cm thickness. Heat the oil in a frying pan. Microwave the lentils according to instructions (about 50 seconds). Sprinkle the herbs on the halloumi, then place the strips into the frying pan for about ten to twenty seconds, turn over for another ten seconds then remove. Plate up!

Halloumi is one of those things I absolutely love, then forget about for ages- I was so pleased to rediscover it! You could definitely be a bit fancier with the salad here- I was feeling rather uninspired when doing a food shop with mum before uni so that was what I had in. Having said that, this tasted fine and the sweetness of the tomatoes and pepper were perfect alongside the saltiness of the cheese.
